MEAT LOAF
1 pound GROUND VEAL 1 pound GROUND BEEF SHOULDER STEAK 1 teaspoon chili powder 3/4 teaspoon salt 1/8 teaspoon pepper 1 8-ounce can whole kernel corn, drained 1 medium onion chopped 1 cup soft bread crumbs 2 eggs, beaten 1/3 cup chopped green bell peppers 1/3 cup catsup Prepared salsa (optional)
Preheat oven to 350 degrees F. Place ground veal and beef in a mixing bowl and sprinkle with chili powder, salt and pepper. Add corn, onion, bread crumbs, eggs, chopped pepper and catsup. Mix thoroughly. Place in a 10 x 4 inch loaf pan. Bake 1 hour or until cooked through. Turn out onto platter and slice. Spoon salsa over slices, if desired. Makes 8 servings
